Abigail Mendoza is a Oaxaca based Zapotec chef who is on a mission to preserve Zapotec cuisine. She does so through her 30 year old restaurant Tlamanalli that exclusively serves Zapotec food she also publishes books talking about this indigenous prehispanic food.
